Canadian almond cake recipe details
Ingredients
450 g | unsalted butter, softened |
200 g | brown sugar |
200 g | caster sugar |
2 large | eggs, beaten |
4 tsp | almond extract |
¼ tsp | salt |
½ tsp | baking powder |
350 g | plain flour |
flaked almonds, to decorate |
Instructions
Preheat oven to Gas Mark 4, 180ºC, 350ºF.Beat butter, sugars, eggs, almond extract, salt and baking powder until light and fluffy. Stir in the flour.
Spoon the mixture into 2 ungreased 12-cup muffin tins, filling to about ¾ full. Top each with 2 or 3 almond flakes and bake for 20-25 minutes until golden brown on top and well risen.
Allow to cool in tins for a few minutes and then transfer to a wire rack to cool completely.
