Ingredients
For the base: | |
6 | eggs, separated |
300 g | icing sugar |
1 pack(s) | vanilla sugar |
190 ml | oil |
190 ml | water |
300 g | flour |
½ pack(s) | baking powder |
1 pinch(es) | salt |
For the topping: | |
1 small can(s) | pineapple |
1 tbsp | cornstarch |
500 ml | single cream |
coconut flakes |
Instructions
Whisk the egg whites with a pinch of salt until stiff.Whisk the egg yolks with sugar and vanilla sugar until frothy. Mix the water with the oil and stir the liquid into the egg mixture gradually. Sift in flour and baking powder and fold in. Fold in the beaten egg white. Pour the batter onto a lined baking tray and bake at 180°C for about 25 minutes. Remove from the oven and allow to cool completely.
Drain the pineapples and catch the juice. Finely chop the pineapples. Fill the pineapple juice into a measuring jug and add water to 250 ml. Pour into a saucepan, whisk in the cornstarch and bring to a boil. Stir in the pineapples and cook briefly. Add 200ml of the cream.
Whisk 300ml of cream until very stiff and fold into the pineapple mixture. Spread the pineapple cream onto the base and garnish with coconut flakes.
Serve chilled.
