Ingredients
Serves: 4- 1 large eggplant, unpeeled, cut into 1/2-inch slices
- 2 to 3 tablespoons extra-virgin olive oil
- Juice of 1 large lime
- Cajun blackening seasoning, to taste
Preparation method
Prep: 5 mins | Cook: 10 mins1. Heat your grill to high.
2. Place the 1/2 inch eggplant slices on a baking sheet. Drizzle both sides of the slices with the olive oil. Pour on lime juice and toss on as much Cajun seasoning as you like.
3. Grill eggplant until brown on both sides, about 10 minutes.
