A remake of a popular Cajun classic that people throughout the country utilize for holiday events. The slightly spicy flavor of the turkey is offset by the sweet and crunchy apple relish. The bourbon glaze brings another flavor which is smoothed by the creamy Maytag cheese garnish. Part of the Southern Gaming Casino Cook-off presented by Four Roses Bourbon.

Ingredients
Serves: 4- Turkey and Marinade:
- 1 1/2 pounds turkey breast, cut into 16 (1-inch, 3 ounce) medallions
- 3/4 cup liquid crab boils
- 1 1/2 ounces (1 shot) Four Roses(R) Bourbon
- 1 cup orange juice concentrate
- 2 tablespoons Worcestershire sauce
- 2 tablespoons pureed roasted garlic
- 1 tablespoon sea salt
- 1 tablespoon minced fresh thyme
- Apple Relish:
- 1 red apple, julienne
- 1 green apple, julienne
- 1 pear, julienne
- 1 lemon, juice only
- 3 spring onions, julienne
- 1/2 cup julienne Swiss chard stem
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 tablespoon minced cilantro
- Salt and pepper, to taste
- 1/2 teaspoon lemon zest
- Sweet potatoes:
- Oil, for frying
- 4 sweet potatoes, sliced thin
- 4 teaspoons butter, chopped
- 4 teaspoons sugar
- Glaze:
- 1 tablespoon butter
- 1 tablespoon minced shallots
- 1 tablespoon minced garlic
- 4 blood oranges, juice only
- 1/2 cup Four Roses(R) bourbon
- 1 1/2 cup orange juice
- 1 cup merlot wine
- 1/4 cup brown sugar
- 1 bay leaf
- 1 tablespoon cornstarch slurry (3/4 tablespoon water and 1/4 tablespoon cornstarch, mixed)
- 2 tablespoons butter in one lump
- Garnish:
- 1 tablespoon crumbled Maytag blue cheese
- 16 cloves roasted garlic
Preparation method
Prep: 20 mins | Cook: 30 mins | Extra time: 12 hours, marinating1. Combine all marinade ingredients and turkey in a large, plastic resealable bag. Allow to marinate for 12 hours.
2. For apple relish: combine all ingredients in a bowl and toss.
3. For sweet potatoes: Pour enough oil into a hot skillet to cover the bottom. Add sweet potatoes. Cook until browned, then place in a bowl and top with butter and sugar. Stir to coat.
4. For turkey: Heat oil in deep fryer or large cast iron pot to 35O degrees F, dry turkey well and place in hot oil. Cook to an internal temperature of 160 degrees F and remove from oil.
5. For glaze: stir all ingredients except cornstarch slurry and 2 tablespoons butter together in a saucepot. Set over medium-high heat. Reduce by 3/4ths, then add cornstarch slurry and stir to thicken. Fold in butter to finish sauce.
6. When ready to assemble: place sweet potatoes at the bottom of each plate. Rest two turkey pieces on top. Top turkey with relish, Maytag cheese, and roasted garlic. Drizzle with sauce. Enjoy.
