Ingredients
Serves: 2- 2 boneless skinless chicken breasts
- 1/2 teaspoon Cajun seasoning
- 1 tablespoon olive or vegetable oil
- 2/3 cup condensed cream of chicken soup
- 1/4 cup water
- 1/4 cup canned chopped green chiles
- 1/2 teaspoon lemon juice
- 2 tablespoons sour cream
- 1 cup hot cooked rice
Preparation method
Prep: 10 mins | Cook: 20 mins1. Rub chicken breasts with Cajun seasoning. Heat oil in large skillet and brown chicken in hot oil, about two minutes on each side.
2. Add soup, water, chiles, and lemon juice to skillet. Stir to combine and bring to a boil, then reduce heat to low. Simmer for about 10 minutes to cook chicken fully. Meat should no longer be pink in the middle.
3. Stir in sour cream and serve over rice.
