Ingredients
1 tbsp | olive oil |
1 tbsp | butter |
1 large | onion, finely chopped |
2 medium | carrots, sliced |
1 tsp | caraway seeds |
600 g | green cabbage, chopped |
500 ml | water |
1 tbsp | brown sugar |
400 ml | tomatoes in juice |
400 ml | white beans, drained, rinsed |
1 tbsp | cider vinegar |
Instructions
Heat oil and butter in large saucepan over medium heat. Add onion and carrots and sauté 3 minutes. Add caraway seeds and cook, whilst stirring, 1 minute.Stir in cabbage, water and sugar. Bring to a quick boil.
Reduce heat to low; cover and simmer 5 minutes. Stir in tomatoes with juice and break up tomatoes with a wooden spoon. Cover and simmer 20 minutes.
Add beans and vinegar. Leave on a simmer, uncovered, 5 minutes or until heated through.
