Buttermilk peach muffins details
- Ingredients
- 1-3/4 cups flour
- 1/2 cup sugar
- 1/2 cup pecans or walnuts
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 cup fresh or frozen peaches
- 2 eggs
- 1/2 cup vegetable oil
- 1/3 cup buttermilk
- 1 teaspoon vanilla extract
Preheat oven to 425 degrees. Grease twelve 2-3/4-inch muffin cups. In a large mixing bowl, combine first 6 ingredients. In another bowl, mash peaches with fork and stir in remaining ingredients. Add peach mixture to flour mixture and stir just until ingredients are moistened. Spoon batter into muffin cups. Bake for 15 to 18 minutes or until tops are golden.
