- Ingredients
- 1-1/3 cups buttermilk
- 1 egg, beaten
- 1-1/2 cups flour
- 2 Tablespoons sugar
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup butter, melted
- Pear Streusel Topping
- 1/2 cup butter
- 1 Tablespoon lemon juice
- 4 pears, peeled and sliced
- 1/3 cup brown sugar
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/8 teaspoon ginger
- 1/4 cup chopped pecans
Instructions:
Combine buttermilk and egg. Add dry ingredients and mix until blended. Add butter. Pour onto hot griddle. Flip when bubble start to break and edges appear dry. When done, top with pear streusel topping.
Streusel Topping: Melt butter in saucepan over low heat. Combine lemon juice and pears and stir into butter. Add brown sugar, cinnamon, nutmeg, ginger, and pecans to pear mixture. Cook over low heat for 5 minutes or until pears are softened.
