Ginger pear muffins recipe details
- Ingredients
- 2 eggs
- 2 teaspoons milk
- 1/2 cup vegetable oil
- 3/4 cup sugar
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground coriander
- 1/4 teaspoon allspice
- 1 Tablespoon finely chopped crystallized ginger
- 2 medium pears – peeled, cored, and finely chopped
- 3/4 cup chopped walnuts
- 1/2 cup raisins
Preheat oven to 350 degrees. In a large bowl, beat eggs, milk, oil, and sugar. Mix dry ingredients and add ginger. Stir into wet ingredients; mix until just blended. Fold in pears, walnuts, and raisins. Fill greased muffin cups 2/3 full. Bake for 20 to 25 minutes or until muffins test done.
Cool briefly on wire rack. Best served warm.
