Burnt cream recipe details
Ingredients
600 ml | whipping cream |
4 medium | eggs, yolks only |
1 tsp | vanilla extract |
3 tbsp | caster sugar |
Instructions
Preheat oven to 160°C.Combine egg yolks and 1 tablespoon of sugar in a large mixing bowl and mix until pale yellow.
Combine vanilla and cream in a saucepan and bring to a boil. Remove the cream from the heat, allow to cool slightly.
Pour cooled egg and cream mixture pour over the egg yolks, whilst whisking.
Divide the mixture into ramekins and bake for about 30 minutes, until set.
Allow to cool, then refrigerate for at least 2 hours.
Sprinkle the top of the cream with the remaining sugar, coating evenly. To caramelise, either place under a very hot grill or use a flame gun to burn the sugar.
Serve chilled.
