Ingredients
For the marinade: | |
400 ml | cider vinegar |
2 tbsp | vegetable oil |
2 tbsp | Worcestershire sauce |
2 tbsp | chilli powder |
1 tsp | red pepper flakes |
1 tsp | salt |
1 tsp | freshly ground pepper, to taste |
1 tbsp | tabasco |
For the Wings | |
1 kg | chicken wings |
For the Blue Cheese Dipping Sauce | |
1 clove(s) | garlic, minced |
2 tsp | Worcestershire sauce |
115 g | crumbled blue cheese |
2 tbsp | milk |
150 ml | sour cream |
150 ml | mayonnaise |
salt and fresh ground pepper to taste |
Instructions
To make the marinade, stir together the first 8 ingredients. Place the chicken wings in a large plastic food storage bag and pour in the marinade. Seal the bag tightly. Massage the bag gently, to distribute the marinade. Place the bag in the refrigerator for at least 4 hours or up to 1 day, turning and massaging the bag occasionally.To make the blue cheese dipping sauce, in a bowl, whisk together the sour cream, mayonnaise, garlic, Worcestershire sauce and blue cheese. Season with salt and pepper. Add enough milk to make a sauce with the consistency of pancake batter. Cover and refrigerate.
Position the oiled grill 10-15 cm above the fire. Remove the wings from the marinade and pat them dry with paper towels. Pour the marinade into a saucepan and bring to a boil; boil for 2 minutes, then reserve. Arrange the wings on the rack. Grill, turning frequently and brushing with the reserved marinade, until cooked through, 25-30 minutes. Serve with the dipping sauce and celery sticks.
