Buffalo Fried Chicken with Cheese

Meaty, fried, cheesy and spicy. What more could a man ask for? Well, maybe a bigger workshop, but this’ll do for now.

Ingredients
Serves: 4
- 4 chicken breasts, boneless and skinless
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs
- 1/2 seasoned panko bread crumbs
- 3 tablespoons canola oil
- 1/4 cup buffalo wing sauce
- 1/4 cup shredded Provolone cheese
- 1/4 cup shredded mozzarella cheese
Preparation method
Prep: 15 mins | Cook: 20 mins
1. Place chicken between two layers of plastic wrap. Using a rolling pin, pound out chicken to be 1/2-inch thick. Season with salt and pepper.
2. In shallow dish, break up the eggs. In separate dish, place panko bread crumbs. First coat each breast of chicken in egg wash, then dredge in the bread crumbs.
3. While you’re dredging the chicken, heat up the canola oil in a large skillet or Dutch oven over medium heat. Place chicken in hot oil and cook for about 10 minutes on each side, until chicken is no longer pink in the middle.
4. When there’s 2 minutes left to go on the chicken, add the wing sauce. Then cover with cheese. When cheese has melted, the dish is ready to serve.
