Bruschetta with shrimp and vegetable salsa recipe details
Ingredients
1 | tomato, diced |
1 small | yellow bell pepper, diced |
125 g | cucumber, diced |
1 | shallot, chopped |
8 slice(s) | Ciabatta |
½ bunch(es) | parsley, chopped |
200 g | shrimp, ready to cook |
5 tbsp | olive oil |
3 tbsp | sherry vinegar |
salt and freshly ground black pepper | |
sugar |
Instructions
Preheat the oven to 150°C.In a bowl, mix together the vegetables, 3 tablespoons of the oil and the vinegar. Season to taste with salt, sugar and pepper.
Bake the bread until golden and crispy. Heat the remaining oil in a skillet and fry the shrimp until pink and just done. Stir in the parsley and season to taste with salt and pepper.
Top each slice of bread with cooked shrimp and vegetable salsa.
