Brunch scrambled eggs recipe

- One 10-ounce package frozen chopped spinach, thawed
- 12 eggs
- 1/2 cup milk
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 Tablespoons butter
- 1 cup shredded cheddar cheese
- 1 cup crumbled feta cheese
Drain thawed spinach well, pressing out excess liquid; set aside. In bowl, beat together eggs, milk, salt, and pepper. In large skillet, melt butter and pour in egg mixture. Cook without stirring until mixture begins to set. Using a large spatula, lift and fold partially cooked eggs so uncooked portion flows underneath. Stir in spinach, cheddar cheese, and half of feta cheese. Continue stirring until mixture is cooked but glossy. Place on platter and top with remaining feta.
