Broiled summer veggies with balsamic vinegar recipe details
This easy side dish? A heaping helping of healthy vegetables, seasoned gently with oregano and balsamic vinegar. Fresh vegetables don’t get better than this.

Ingredients
Serves: 4- 1 red bell pepper, seeded and sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 2 portobello mushrooms, caps sliced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 tablespoon balsamic vinegar
- 1/3 teaspoon salt
- 1/4 teaspoon black pepper
Preparation method
Prep: 10 mins | Cook: 11 mins1. Preheat broiler to High and coat a baking sheet with nonstick cooking spray.
2. Toss vegetables with oil and oregano on the baking sheet.
3. Broil for about 7 minutes, then turn the vegetables over and broil for 4 more minutes, until tender and browned. Drizzle with vinegar and season with salt and pepper. Serve.
