Broccoli with lemon cream sauce recipe details
Ingredients
1 kg | broccoli, cut into florets, washed |
1 tbsp | flour |
juice of 1/2 lemon | |
salt and pepper, to taste | |
4 tbsp | butter |
1 medium | egg, yolk only |
2 tbsp | double cream |
Instructions
Cook the broccoli in slightly salted water until tender. Drain. Keep the cooking liquid and set aside.Melt the butter in a small saucepan and then remove from heat. Stir in the flour and gradually blend in 260ml of the broccoli cooking liquid. Bring to a boil over low heat and simmer for about 10 minutes.
Beat the egg yolks with 1 tablespoon of lemon juice and 2 tablespoons of broccoli sauce. Remove the sauce from heat and blend in egg mixture.
Stir in the cream and keep warm. Season to taste with salt and pepper and more lemon juice, if desired.
To serve put broccoli florets in a warm serving dish and pour over the sauce.
