Broccoli mandarin salad recipe details
Ingredients
1 kg | broccoli florets |
8 slice(s) | bacon, fried, chopped |
150 g | mushrooms, chopped |
50 g | almonds, toasted |
300 g | mandarin oranges, drained |
1 small | red onion, chopped |
For the marinade/dressing: | |
2 medium | eggs |
20 g | sugar |
1 tsp | cornstarch |
1 tsp | dry mustard |
60 ml | white wine vinegar |
60 ml | water |
120 ml | mayonnause |
Instructions
In a saucepan, whisk together eggs, sugar, cornstarch and dry mustard. Add vinegar and water and cook slowly until thickened.Remove from heat and stir in mayonnaise. Cool.
Cook broccoli until tender. Fry bacon until crisp.
Marinate broccoli in dressing for 4 hours. Add remaining ingredients and toss well.
