Broad beans with bacon recipe details
|2 tbsp||olive oil|
|1 small||onion, finely chopped|
|1 large||garlic clove, finely chopped|
|65 g||smoked streaky bacon, roughly chopped|
|250 g||broad beans (thawed, if frozen)|
|1 tsp||paprika powder|
|1 ½ tbsp||sweet sherry|
|salt and freshly ground black pepper|
InstructionsHeat the oil in a frying pan and fry the onion, garlic and bacon over a high heat for 5 minutes until browned and softened.
Add the beans and paprika powder and stir-fry for a couple of minutes. Add the sherry and cook for 5 – 10 minutes until the beans are tender. Add salt and pepper to taste.
By leaving out the bacon and adding instead the same quantity of chopped sun-dried tomatoes in oil, the dish will be suitable for vegetarians.
