Broad beans with bacon recipe details
Ingredients
2 tbsp | olive oil |
1 small | onion, finely chopped |
1 large | garlic clove, finely chopped |
65 g | smoked streaky bacon, roughly chopped |
250 g | broad beans (thawed, if frozen) |
1 tsp | paprika powder |
1 ½ tbsp | sweet sherry |
salt and freshly ground black pepper |
Instructions
Heat the oil in a frying pan and fry the onion, garlic and bacon over a high heat for 5 minutes until browned and softened.Add the beans and paprika powder and stir-fry for a couple of minutes. Add the sherry and cook for 5 – 10 minutes until the beans are tender. Add salt and pepper to taste.
Note:
By leaving out the bacon and adding instead the same quantity of chopped sun-dried tomatoes in oil, the dish will be suitable for vegetarians.
