Ingredients
100 g | butter |
100 g | sugar |
2 | eggs |
100 g | flour |
1 tbsp | grated lemon rind |
½ tsp | baking powder |
some | syrup of your choice, e.g. toffee or maple syrup |
Instructions
Whisk the butter with the sugar and whisk in the eggs. Whisk until pale yellow. Sift the flour and the baking powder and fold in together with the lemon rind.In a Microwave bowl, cover the bottom with syrup. Pour over the batter and cover with foil or a lid. Bake the cake in the microwave for 3-4 minutes. Check with a wooden skewer if done, otherwise bake for another minute.
Turn out the sponge cake on a plate. Serve warm with custard.
