Brentford rolls recipe details
Ingredients
1 tbsp | dried yeast |
2 medium | eggs, beaten |
600 ml | milk, warmed to 40-45°C, 100-110°F |
2 tbsp | sugar |
120 g | unsalted butter |
500 g | strong white bread flour |
500 g | plain flour |
1 pinch(es) | salt |
Instructions
An enriched soft bread roll.Mix the flours together and add the sugar and salt and mix well. Rub in the butter and mix in the yeast. Add the eggs and most of the milk and mix to a dough. Knead for a few moments to combine and add more milk if still dry.
Knead on a lightly floured surface until shiny, pliable and no longer sticky.
Place in a lightly oiled bowl, cover and leave to rise in warm place until doubled in size and springy to the touch. Knock back the dough and shape into rolls and place on a greased baking sheet. Cover and leave to prove for an hour.
Preheat the oven to Gas Mark 8, 230°C, 450°F and bake for about 20-30 minutes until golden brown. Remove and allow to cool on a wire rack.
