Breakfast tortilla recipe details
Ingredients
4 | flour tortillas |
2 tbsp | refried beans |
4 tbsp | salsa |
3 | eggs, beaten |
100 g | lettuce, shredded |
150 g | freshly grated Cheddar cheese |
150 g | sour cream |
Instructions
Stir together the beans and 2 tablespoons of the salsa until smooth.Heat oil in a pan over medium heat, pour in the eggs and fry for approximately 1 minute or until slightly set. Spoon the bean mixture onto one half of the omelette and flip over the other half to a half moon. Turn over the omelette and cook for some more seconds.
Divide evenly 2 tablespoons of salsa onto the tortillas. Cut the omelette into 4 equal pieces and place one piece onto each tortilla. Cover each with shredded lettuce and grated Cheddar cheese.
Roll up tortillas and serve with sour cream.
