Breakfast burrito roll ups recipe details
- Ingredients
- Eight 8-inch burritos
- 1 cup chopped onions
- 1 cup sliced peppers (red, orange, or green)
- 16 asparagus spears, pre-cooked (fresh, canned, or frozen)
- 1 cup black olives
- 2 cups shredded mozzarella
- 8 eggs, beaten
- 3 cups milk
- 2 Tablespoons flour
- 1/2 teaspoon garlic powder
- Few drops of hot pepper sauce
- 1/2 cup shredded mozzarella
Preheat oven to 350 degrees. Spray a 9 x 13-inch baking dish with non-stick cooking spray.
Cook onions and peppers in microwave for 3 minutes until slightly softened. Place 2 asparagus spears, cooked vegetable mixture, and about one-eighth of the mozzarella cheese in the center of each burrito. Roll up burrito and place seam-side down in baking dish.
Mix together eggs, milk, flour, garlic, and hot sauce. Pour over burritos. Sprinkle 1/2 cup shredded cheese over the top. Bake in preheated oven for 45 to 50 minutes. Remove from oven and let stand 10 minutes. Cut into squares and serve.
Recipe can be prepared in advance and refrigerated or frozen prior to cooking.
