Ingredients
300 g | stale brioche, cut into 2cm cubes |
3 | tart apples, peeled, cored and sliced |
1 dash(es) | lemon juice |
35 g | dried cranberries |
500 ml | milk |
150 g | brown sugar |
60 g | butter |
3 | eggs |
1 tsp | vanilla extract |
½ tsp | almond extract |
1 tsp | ground cinnamon |

Instructions
Preheat the oven to 180°C. Grease a rectangular baking dish with 20g of the butter.Drizzle the apple slices with lemon juice and combine in a large bowl with the brioche cubes and the dried cranberries.
Bring the milk with sugar and the remaining butter to a boil, then remove from heat.
In a bowl, whisk the eggs with the vanilla extract, cinnamon and almond extract until frothy. Gradually whisk in the hot milk mixture. Pour over the ingredients in the large bowl. Toss until well combined and transfer the mixture into the prepared baking dish.
Bake for 50 minutes or until the bread pudding is golden brown and an inserted wooden skewer comes out clean.
Serve dusted with icing sugar.
