Ingredients
500 g | stale French bread, e.g. white and whole meal baguette |
250 ml | milk |
2 tbsp | butter |
1 | onion, finely chopped |
1 tbsp | fresh parsley, chopped |
2 | eggs |
5 tsp | salt |
1 pinch(es) | freshly ground black pepper |
Instructions
Place the diced bread into a large bowl. Heat the milk until it starts to bubble at the edges, then pour the milk over the bread. Toss briefly to coat the bread. Let soak for 15 minutes.Meanwhile, melt the butter in a pan over medium heat and sauté the onions until soft. Stir in the parsley, and remove from the heat. Add to the bread along with the eggs, salt and pepper. Knead with your hands until the dough is well combined, sticky and pliable.
In a large pot, bring lightly salted water to a boil. Form the dough into 10-15 dumplings and carefully drop them into the boiling water. Simmer the dumplings for approximately 20 minutes and until they have risen to the surface. Take out with a slotted spoon and serve immediately.
Goes well with any roast or braised meat with lots of gravy. Also a good accompaniment for a ragout of wild mushrooms.
Note:
If you are not experienced, place first a small test dumpling into the slightly boiling water; if the dumpling falls apart, knead some breadcrumbs into the dough, before you go on.
