Ingredients
Serves: 4- 4 uncooked bratwurst links, halved and cut into bite-size pieces
- 1 (20 ounce) package refrigerated diced potatoes with onion
- 1 cup frozen corn kernels
- 1 green bell pepper, chopped
- 1/4 cup chopped roasted red bell pepper
- 3/4 cup shredded jack cheese
- 1/2 teaspoon seasoned salt
Preparation method
Prep: 10 mins | Cook: 20 mins1. Place a skillet over medium-high heat. When hot, add chopped bratwurst and fry, stirring until cooked through. Drain on paper towels, then return to skillet. Add potatoes, corn, and green bell pepper.
2. Cover the skillet and cook the sausage with vegetables over medium heat for about 13 minutes, until the corn and bell pepper are soft. Stir every 4 or 5 minutes.
3. Add roasted red bell pepper and salt. Toss to heat the red pepper through, then serve topped with cheese.
