Ingredients
Serves: 6- 3 tablespoons vegetable oil
- 1/2 onion, chopped fine
- 3 stalks celery, chopped fine
- 1 bell pepper, chopped fine
- 2 pounds chicken breast or thighs, cut into bite-size pieces
- 2 pounds spicy smoked sausage, cut into 1/4-inch pieces
- 3 (15-ounce) cans diced tomato and juice
- 1 cup uncooked rice
- Creole Seasoning, to taste
Preparation method
Prep: 20 mins | Cook: 1 hour 30 mins1. Heat large skillet over medium heat. Add oil. Saute onion, celery, and bell pepper until onion turn light brown. Add chicken, cook until chicken is no longer pink. Stir in smoked sausage and cook until brown.
2. Stir the tomatoes and juice into the skillet and bring to a boil. Add rice, return to boil. Cover pot and reduce heat. Simmer until rice is tender,stirring occasionally, about 1 hour. Season to taste with Creole Seasoning.
