Ingredients
Serves: 4- 4 lean center-cut pork chops, 3/4-inch thick
- 2 1/2 tablespoons flour
- 1 tablespoon olive oil
- 1 cup chicken stock
- 1 cup unsweetened apple juice
- 2 tablespoons brandy
- 1/2 teaspoon dried thyme
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 1/2 pounds sweet potatoes, cut into 1/4-inch slices
Preparation method
Prep: 10 mins | Cook: 1 hour1. Heat oil in a large skillet over medium heat. Dredge the pork chops in the flour, then add to hot oil and cook for about 5 minutes, turning, until crispy. Remove from skillet.
2. Wipe out skillet and add the stock, apple juice, brandy, thyme, salt, and pepper. Stir together and bring to a boil over medium heat.
3. Add the potatoes and pork chops to the sauce. Turn the heat down to low and simmer for 45 minutes, until pork is no longer pink in the middle. Serve pork with sauce spooned over it.
