|250 ml||vegetable stock|
|salt and freshly ground pepper, to taste|
Trim the fennel and cut into quarters.
Heat the butter in a large heavy based pan, add the fennel and stir well so that all fennel is coated with butter.
Add the vegetable stock; bring to the boil for a couple of minutes. Then lower the heat, season with salt and pepper and leave to simmer, covered, for 30 minutes.
