New mexico frittata recipe details
- Ingredients:
- 1/4 cup of mild Hatch green chili
- 2 cloves of garlic
- 2 Tablespoons olive oil
- 18 to 20 eggs
- 3/4 cup of whole milk
- salt and pepper to taste
- 1/2 cup of grated Monterey Jack cheese
Mince or press garlic and saute in a 12-inch cast iron skillet in half of the olive oil until soft. Remove from oil. In large bowl beat eggs and milk and add salt, pepper and green chili. Add additional oil to pan and heat. Pour in egg mixture. Top with garlic and cheese. Cook over moderate heat until fluffy and semi-firm. Then place in a pre-heated broiler and watch carefully. It will only take a minute or so for it to brown. Slice and serve immediately.
