Blueberry muffin cake recipe details
- Ingredients
- 1-1/2 cups sifted flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup margarine
- 1-1/2 cups floured blueberries
- 2 eggs
- 1/3 cup milk
- 1 teaspoon vanilla
- 1 cup sugar
Sift flour, baking powder, and salt together. Cream the shortening with sugar till fluffy; add eggs and beat well. Add flour mixture to creamed mixture alternately with milk. Mix extremely well. The longer you beat it, the better the cake will be. I always try for at least 5 minutes. Fold in vanilla and floured berries. Pour batter into a well-greased and floured 8-inch square pan. Sprinkle with granulated sugar. Bake at 350 degrees for 35 to 40 minutes. Cut into squares and enjoy!
