Blueberry bucklecoffee cake recipe details
- Ingredients:
- 2 cups all-purpose flour
- 3/4 cup sugar
- 2-1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 1/4 cup shortening
- 3/4 cup milk
- 1 egg
- 2 cups fresh or frozen blueberries, thawed and drained
- Crumb Topping
- 1/2 cup sugar
- 1/3 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 cup (1/2 stick) margarine or butter, softened
- Glaze
- 1/2 cup powdered sugar, sifted
- 1/4 teaspoon vanilla or lemon extract
- 1-1/2 to 2 teaspoons hot water
Heat oven to 375 degrees. Grease square pan, 9 x 9 x 2 inches, or round pan, 9 x 1-1/2 inches. Blend flour, sugar, baking powder, salt, shortening, milk, and egg; beat 30 seconds. Carefully stir in blueberries. Spread batter in pan. Combine all Crumb Topping ingredients and mix until crumbly. Sprinkle batter with Crumb Topping. Bake for 45 to 50 minutes or until toothpick inserted in center comes out clean. Mix all Glaze ingredients until drizzling consistency and drizzle over warm cake. Serve warm.
Serves: 9
NOTE: Recipe can be doubled and baked in a 10-1/2 x 14-3/4 inch baking dish.
