Black Pudding with Apple recipe

Ingredients
3 | apples, Bramleys or Cox Orange, peeled, cored and sliced |
25 g | butter |
2 tsp | brown sugar |
2 tbsp | vegetable oil |
8 slice(s) | black pudding |
4 | streaky bacon rashers, cut lengthwise into thin strips |
100 ml | cider |
Instructions
Heat the butter in a small pan, add the apple slices and sugar and cook over medium heat, stirring frequently, for 8–10 minutes, or until soft and slightly caramelized. Take from the heat and set aside.
In another pan, heat the oil and fry the black pudding in batches over medium-high heat for about 3 minutes each side, or until slightly crisp. Remove from the pan and keep warm.
Fry the bacon strips until crisp, stirring frequently. Remove from the pan, increase the heat, and pour in the cider. Allow to boil until well reduced and syrupy, stirring to loosen any bits stuck to the bottom of the pan.
To serve, layer in turn black pudding and apples on each plate. Divide some of the bacon on top and drizzle with the pan juices. Serve with mashed potatoes.
