Biscuits with pistachio topping recipe details
Ingredients
For the dough: | |
175 g | all-purpose flour |
75 g | cornstarch |
1 | egg |
75 g | sugar |
1 packet(s) | vanilla sugar |
125 g | butter or margarine |
For the Icing: | |
2 | egg whites |
150 g | sugar |
1 packet(s) | vanilla sugar |
lemon juice | |
25 g | pistachios, chopped |
Instructions
Put flour and cornstarch in a bowl. Add the egg, the sugar, vanilla sugar, and soft margarine and knead to a smooth dough. Wrap the dough into foil and place it in the fridge for at least 1 hour.On a lightly floured surface, roll out the dough to 3mm thickness. Cut out biscuits with e. g. star-shaped or moon-shaped cookie cutters. Place the biscuits on 2 baking trays, lined with baking paper.
Preheat the oven to 175°C.
For the icing:
Whisk the egg whites with sugar, vanilla sugar and some drops of lemon juice until stiff. Carefully fold in 15g of the chopped pistachios and brush the top of the biscuits with it. Transfer one baking tray at a time into the oven and bake the biscuits for 12-14 minutes.
Place the biscuits on a wire rack and sprinkle with the remained 10g of chopped pistachios. Allow to cool completely, then store in an airtight container.
