Ingredients

500 g bacon, diced
500 g pork shoulder, diced
250 g Polish sausage, sliced
500 g sauerkraut, sliced
250 g onions
250 g mushrooms, sliced
½ cup(s) tomato puree
3 clove(s) garlic, minced
1  bay leaf
1 cup(s) white wine
paprika powder
marjoram
caraway seeds
salt and pepper
lard

Instructions

Preheat the oven to 120°C.

In a large roasting tin heat some lard and fry the bacon, onion, mushrooms and pork until slightly browned. Add the sauerkraut, sausage, bay leaf, tomato purée, garlic and wine and just barely cover with water. Season with salt, pepper, paprika powder, marjoram and caraway.

Cover and transfer into the oven. Cook for at least 3 hours.

Check seasoning and correct if necessary. Serve with a bowl of sour cream and crusty bread.
