Vegetarian doesn’t mean flavorless. Not with these burritos. Seasoned with a serrano chile and a host of Mexican spices.

Ingredients
Serves: 4- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 green bell pepper, seeds removed, chopped
- 1 serrano chile, seeds removed, chopped
- 1/2 teaspoon ground cumin
- 1 (14 ounce) can kidney beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1 tomato, chopped
- 2 tablespoons ketchup
- 2 tablespoons water
- 2 tablespoons chopped fresh cilantro
- Shredded lettuce, shredded cheese, and/or sour cream, as desired
Preparation method
Prep: 10 mins | Cook: 8 mins1. Pour oil into a large skillet and set over medium heat. Cook onion, garlic, and bell pepper in hot oil for about 4 minutes, then add the serrano chile and cumin. Cook for 1 more minute.
2. Add beans, corn, tomato, ketchup, and water. Bring to a low boil, mashing beans up against the sides of the skillet as they heat.
3. Spoon the filling into each of 4 (10-inch) flour tortillas, and top with cilantro. Add any desired toppings, roll up, and serve.
