Just for your toaster oven, a smaller version of the classic favorite.

Ingredients
Serves: 4- 1/3 pound lean ground beef
- 1/4 cup minced onion
- 1 clove garlic, crushed
- 1 (14 ounce) can crushed tomatoes
- 1 (6 ounce) can tomato paste
- 2 (6.5 ounce) cans canned tomato sauce with sausage
- 1 tablespoon white sugar
- 3/4 teaspoon dried basil leaves
- 1/4 teaspoon fennel seeds
- 1/2 teaspoon Italian seasoning
- 1/4 tablespoon salt
- 1/8 teaspoon ground black pepper
- 2 tablespoons chopped fresh parsley
- 6 lasagna noodles
- 8 ounces ricotta cheese
- 1 egg
- 1/2 teaspoon salt
- 1/2 pound mozzarella cheese, sliced
- 1/2 cup grated Parmesan cheese
Preparation method
Prep: 30 mins | Cook: 1 hour 45 mins1. Combine ground beef, onion, and garlic in a heavy-bottomed skillet or Dutch oven. Place over medium heat and cook until beef is no longer pink.
2. Add tomatoes, tomato paste, tomato sauce, water, sugar, basil, fennel, Italian seasoning, salt and pepper to taste, and half of the parsley. Bring to a boil, then simmer sauce over low heat for 90 minutes.
3. Cook lasagna in boiling water, according to package directions. Drain and rinse in cold water.
4. Preheat toaster oven to 350 degrees F.
5. In a small bowl, whisk together the ricotta cheese, remaining parsley, and salt to taste. This will be one of the cheese layers in the lasagna.
6. Cover the bottom of an 8×8-inch pan with 1/3 cup sauce. Layer with 3 noodles, then cover with half of the ricotta. Place a few mozzarella slices over the ricotta, then pour more sauce into the casserole. Sprinkle with Parmesan. Continue in this way until the lasagna pan is full, ending with cheese.
7. Bake covered for 45 minutes, then uncover and bake for another 15 minutes. Remove from oven and let sit for 15 minutes, then serve.
