Ingredients
Serves: 4- 2 onions, diced
- 1 tbls of butter
- 2 pints vegetable or chicken stock
- 4 cups fresh or frozen peas
- 1 bunch parsley, chopped
- 1 teaspoon of garlic powder (optional)
- sprig of mint
- sprig of rosemary
- sea salt and ground black pepper
Preparation method
Prep: 5 mins | Cook: 20 mins1. Fry the onion with butter in a large pot. Then add the stock with the peas, and let simmer until the peas are cooked. Add the parsley, garlic powder, mint, and rosemary. Take off the heat and let cool down, giving the recipe a chance to infuse the flavors. After a few minutes taste it to see how much salt or/and pepper to add. Remove the rosemary and mint sprigs before serving.
