Ingredients
Serves: 6- 2 pounds stewing beef, cut into 1/2-inch pieces
- 1/4 cup flour
- Salt and pepper
- 2 tablespoons vegetable oil
- 3 small onions, chopped
- 4 cloves garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 (28 ounce) can chopped tomatoes
- 1 cup beef stock
- 2 teaspoons pureed canned chipotle chiles
- 2 cups cooked kidney beans
Preparation method
Prep: 20 mins | Cook: 2 hours1. Preheat oven to 350 degrees F.
2. Place flour, salt and pepper in a large plastic resealable bag. Add beef, seal bag, and shake to coat. Remove beef.
3. Heat oil in Dutch oven or large oven-safe skillet. Cook dredged beef in hot oil for about 6 minutes, until seared. Remove to a plate and reserve, wiping out half of the oil in the skillet.
4. In remaining hot oil, cook onions and garlic for about 5 minutes, stirring. Then add chili powder, cumin, oregano, tomatoes, stock, and chipotle pepper. Bring to a boil, add the beef, and place Dutch oven in oven for 1 1/2 to 2 hours.
