Here’s a tasty recipe for meatloaf I whipped together. Fewer ingredients often make for the best recipes and keep the flavors from getting too complicated.

Ingredients
Serves: 5- 3 pounds ground beef
- 1/2 stalk celery, finely chopped
- 1/4 large white onion, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons Worcestershire sauce, or to taste
- 2 teaspoons hickory liquid smoke, or to taste
- 8 saltine crackers, crushed
- sea salt and ground black pepper to taste
- 1/2 cup BBQ sauce
- 1/4 cup distilled white vinegar
- 1/4 cup brown sugar
- 5 strips bacon
Preparation method
Prep: 20 mins | Cook: 1 hour1. Preheat oven to 350 degrees F. Line a baking sheet with aluminum foil.
2. Combine the ground beef in a mixing bowl with the celery, onion, garlic, Worcestershire sauce, liquid smoke, and cracker crumbs. Season with salt and pepper, and mix with your hands until evenly combined. Set aside.
3. Bring the BBQ sauce, vinegar, and sugar to a simmer in a saucepan over medium-high heat. Reduce heat to a simmer and cook until thickened, about 5 minutes.
4. Meanwhile, form the mixture into a loaf on the baking sheet so it is about 1 1/2 inches thick. Make it long and skinny, make it round–it’s all up to you. Once you’ve decided on the form, lay the bacon strips over top. Pour the thickened sauce over the loaf.
5. Bake the meatloaf in the preheated oven until a thermometer inserted into the thickest part reads at least 160 degrees F, about 1 hour. Serve and enjoy!
