Bell pepper cream chicken recipe details
Ingredients
2 piece(s) | chicken breast fillets |
2 small | bell peppers |
1 medium | onions |
1 clove(s) | garlic |
½ | dried or fresh chilli, finely chopped |
200 ml | single cream |
2 tbsp | crème fraîche |
1 tsp | tomato puree |
125 ml | vegetable stock |
1 tbsp | paprika powder |
70 g | cheese, grated |
salt and pepper, to taste |
Instructions
Preheat oven to 180°C.Rinse/wash chicken breast fillets with water and dry with kitchen roll.
Season the fillets with salt and paprika powder and place in an oven proof dish. Wash and cut the bellpeppers into strips, discarding the white bits and seeds, and place over the fillets.
Cut the onion in half and then into half onion rings and fry gently in oil. Add the finely chopped chilli.
Press or chop the garlic and add to the onion, add the tomato puree and stir well.
Add the tablespoon paprika powder stir again and then add the vegetable stock.
Then add the cream, 2 generous tablespoon creme fraiche and season with salt and pepper.
Pour this mixture over the chicken breast fillets (the fillets should be covered with sauce) and place in the oven. Bake for approximately 35 minutes.
Serving suggestion:Serve with rice and green vegetables.
