Bejing soup recipe details
Ingredients
1 | onion |
2 tbsp | soy sauce |
1 tbsp | tomato paste |
100 g | bamboo shoots, chopped |
1 small can(s) | soy beans, drained |
1 handful | dried black Chinese mushrooms, soaked in water for 30 minutes and drained |
100 g | soy sprouts |
1 tbsp | cornflour |
3 tbsp | vinegar |
100 g | chicken breast fillet, cooked and finely diced |
2 | eggs, beaten |
1 l | chicken stock |
1 tbsp | sesame oil |
1 handful | kimchi, pickled cabbage |
2 tsp | Sambal Ulek |
1 tsp | grated ginger |
2 clove(s) | garlic, minced |
some | peanut oil |
Instructions
Heat the peanut oil and briefly sear onion, ginger and garlic. Add the tomato purée and cook stirring for 30 seconds. Add the soy sauce and the chicken stock and bring to a boil. Add bamboo shoots, soy beans, chicken, chopped mushrooms and the soy sprouts.Bring to the boil again. Add the cornstarch, mixed with a tablespoon of water. Then add vinegar and whisk in the eggs. Remove from heat and stir in Kimchi. Season to taste with Sambal Ulek, sesame oil, vinegar and soy sauce.
