Ingredients
Serves: 4- 1 pound stewing veal, cut into 1-inch pieces
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
- 2 portobello mushrooms, stems removed and caps cut into 1-inch pieces
- 1 onion, chopped
- 2 tablespoons flour
- 1 (12 ounce) bottle dark beer
- 1 tablespoon white wine vinegar
- 1/2 teaspoon dried thyme, crumbled
- 1 pound carrots, peeled and cut into 2-inch chunks
Preparation method
Prep: 20 mins | Cook: 1 hour 30 mins1. Heat vegetable oil in Dutch oven over high heat. Sprinkle veal with some of the salt and pepper, then sear in the hot oil, about 4 minutes per batch. Reserve on a plate.
2. Add the mushrooms and onion to the pot, and cook over medium heat for about 5 minutes. Add flour, seared veal, beer, vinegar, thyme, carrots, and a little more salt and bring stew to a boil. Cover and simmer on low for 1 1/4 hours.
3. Remove meat and vegetables from Dutch oven. Reduce liquid over medium heat until it measures just over a cup, then serve over meat.
