Carpaccio of beef has become famous throughout the world as modern Italian cuisine.

Ingredients
Serves: 4- 1 pound beef sirloin, bright red raw (sliced paper thin)
- 1 egg yolk
- 1 cup olive oil
- juice 1 lemon
- salt & pepper
- 1/2 teaspoon dry mustard dissolved in 1 teaspoon warm water
- 1 tablespoon minced garlic
- dash hot pepper sauce
- a wedge Parmesan cheese
- 1 lemon, cut into wedges
Preparation method
Prep: 15 mins1. Arrange the beef on a plate so that it barely overlaps.
2. Place the egg yolk in a blender with half the oil. Pulse to mix. Turn the blender on, and add the oil in a slow stream. Add the lemon, mustard and seasonings. Pulse.
3. Drizzle with the olive oil, and season with the salt and pepper. Shave some of the Parmesan cheese over the dish, and serve with a lemon wedge.Editor’s note:
