Beetroot and Orange Salad recipe
Ingredients
4 medium | beetroot, trimmed |
3 | oranges, peeled |
For the honey and mustard dressing: |

juice of 1 orange | |
1 tbsp | Dijon mustard |
130 ml | honey |
2 tbsp | sour cream |
120 ml | olive oil |
Instructions
Place beetroot in a large saucepan.
Cover with water and bring to the boil. Reduce heat and simmer for 35 minutes or until tender. Drain and set aside to cool.
Segment the oranges by cutting away the membrane between each of the segments. Set aside.
For the dressing combine the orange juice, mustard, honey, olive oil and sour cream in a bowl and whisk to combine.
Peel skin from the beetroot and cut beetroot into wedges. Toss with orange segments in a bowl. Transfer salad to a serving bowl and drizzle with the dressing. Mix to combine.
