Beef bouillon recipe details
Ingredients
2 kg | lean beef shank, cut into small cubes |
1 kg | beef bones, marrow bones and meaty bones |
200 g | celeriac, peeled and diced |
200 g | carrots, peeled and sliced |
4 | cloves |
1 | bay leaf |
3 leaves | lovage |
salt, to taste | |
1 | onion, quartered |
Instructions
Place beef and bones into a large stockpot and cover with approximately 3 litres of cold water. Bring to a boil and simmer over low heat for 4-5 hours, skimming any scum occasionally.Season with salt. Add vegetables, bay leaf, lovage and cloves and simmer for another hour. Strain through a sieve, lined with cheesecloth into another stockpot.
Bring to the boil again and cook and reduce uncovered, tasting every now and then, until the soup has developed its rich flavour.
Serve as a clear soup course in a menu, e.g. with vermicelli or sponge diamonds (see my recipe in the database).
