Ingredients
375 g | flour |
1 packet(s) | active dry yeast |
75 g | sugar |
1 tsp | vanilla extract, 1-2 tsp |
1 pinch(es) | salt |
1 pinch(es) | allspice |
50 ml | oil |
1 | egg |
200 ml | milk |
For the topping: | |
250 g | poppy seed filling |
100 g | single cream |
2 | eggs |
50 g | sugar |
3 tbsp | rum |
250 g | curd cheese |
1 tsp | vanilla extract, 1-2 tsp |
1 | ripe lemon, juice and grated rind |
450 g | plum butter |
720 g | apple sauce |
For the crumbles: | |
300 g | flour |
150 g | sugar |
1 tsp | cinnamon |
1 tsp | vanilla extract, 1-2 tsp |
200 g | butter |
Instructions
Preheat the oven to 180°C.For the dough:
Sieve the flour in a bowl and mix well with the yeast. Add in the remaining ingredients and mix with a hand mixer until the dough is smooth and pliable. Cover the dough with a tea towel and leave to rise at a warm place.
Dust the dough with flour and knead with your hands on a floured surface. Roll out the dough in a baking tray, and place a cake frame around.
For the topping:
Bring the poppy seed with the cream to the boil, then leave to cool slightly. Mix in one egg, 25g sugar and rum. In a separate bowl, mix the curd cheese with 25g sugar, vanilla extract, the other egg, the lemon juice and lemon rind.
Place in turn dollops of the poppy seed mixture, the curd cheese mixture and the plum butter on the dough and fill free spaces with apple sauce.
Preheat the oven to 180°C.
For the crumbles:
Sieve the flour in a bowl, mix with sugar, cinnamon and vanilla extract. Add in butter. Knead with your fingertips until crumbly. Sprinkle the crumbles on top.
Allow the dough to rise again in a warm place. Bake the cake for 35-40 minutes.
Place the baking tray on a wire rack and allow the cake to cool. Remove gently the cake frame.
