Beef and Bean Stew recipe

|2 kg||green beans, sliced|
|1 ½ kg||beef, shin or chuck, cubed|
|1 kg||tomatoes, peeled and diced|
|250 g||onions, chopped|
|1 l||beef stock|
|salt and pepper|
|1 bunch(es)||parsley, chopped|
In a roasting tin, melt the butter. Layer first the meat, then onions, beans and tomatoes into the tin. Season each layer with salt and pepper.
Add the stock, cover and bring to a boil. Stew over low heat for 45-50 minutes. Stir thoroughly, cover again and cook for 20-30 more minutes or until the meat is tender.
Season to taste with salt, pepper and nutmeg and and serve the stew, sprinkled with parsley.
