Beef and bean stew recipe details
Ingredients
2 kg | green beans, sliced |
1 ½ kg | beef, shin or chuck, cubed |
1 kg | tomatoes, peeled and diced |
250 g | onions, chopped |
1 l | beef stock |
salt and pepper | |
2 tbsp | butter |
nutmeg | |
1 bunch(es) | parsley, chopped |
Instructions
In a roasting tin, melt the butter. Layer first the meat, then onions, beans and tomatoes into the tin. Season each layer with salt and pepper.Add the stock, cover and bring to a boil. Stew over low heat for 45-50 minutes. Stir thoroughly, cover again and cook for 20-30 more minutes or until the meat is tender.
Season to taste with salt, pepper and nutmeg and and serve the stew, sprinkled with parsley.
