A very simple chili that gets a down-home finish from cornmeal. Inspired by Iron Skillet’s “Camp Meat Chili.”

Ingredients
Serves: 8- 3 pounds coarsely ground meat
- 6 tablespoons chili powder
- 1 tablespoon oregano
- 1 tablespoon cumin
- 1 tablespoon salt
- 1/2 tablespoon cayenne pepper
- 2 large cloves garlic, minced
- 1 teaspoon Tabasco (optional)
- 1 quart water
- 1/4 cup white or yellow corn meal
Preparation method
Prep: 10 mins | Cook: 8 hours1. In a skillet over medium heat, brown ground meat; drain. Transfer to 6-quart slow cooker. Add seasonings and water, cover, and cook for 7 1/2 hours on LOW.
2. Skim off fat. Stir in corn meal and cook on HIGH for 30 minutes. Stir occasionally.Alternate Method
Cook for 4 hours on HIGH.
