|20||green king prawns, peeled, deveined, tails intact|
|1 tbsp||lemongrass, centre finely chopped|
|2 leaves||kaffir lime, finely chopped|
|1 tsp||palm sugar|
|2 clove(s)||garlic, finely chopped|
|1 tsp||fresh ginger, grated|
InstructionsCombine prawns, lemongrass, lime leaves, sugar, garlic and ginger.
Cover and place in the fridge for 3 hours.
Soak 20 bamboo skewers in water for about 20 minutes.
Thread the prawns, tail-end first, onto bamboo skewers and cook on the grill for about 1 minute each side or until they change colour.
Serve e. g. with mango mayonnaise.
