BBQ Prawn Skewers with Lemon Grass recipe

Ingredients
20 | green king prawns, peeled, deveined, tails intact |
1 tbsp | lemongrass, centre finely chopped |
2 leaves | kaffir lime, finely chopped |
1 tsp | palm sugar |
2 clove(s) | garlic, finely chopped |
1 tsp | fresh ginger, grated |
Instructions
Combine prawns, lemongrass, lime leaves, sugar, garlic and ginger.Cover and place in the fridge for 3 hours.
Soak 20 bamboo skewers in water for about 20 minutes.
Thread the prawns, tail-end first, onto bamboo skewers and cook on the grill for about 1 minute each side or until they change colour.
Serve e. g. with mango mayonnaise.
