Calabrian salad of cherry tomatoes and green beans recipe details
Ingredients
500 g | green beans |
salt and freshly ground black pepper | |
50 g | pine nuts, roasted |
6 clove(s) | garlic, mashed |
5 tbsp | olive oil |
1 ½ tbsp | rosemary, fresh |
250 g | cherry tomatoes, halved |
3 tbsp | balsamic vinegar |
Instructions
Cook the beans in salted water for 10 minutes. Drain.Sauté the garlic and rosemary in 1 tbsp of oil.
Mix together the vinegar and the remaining oil. Season with salt and pepper. Arrange the beans and the tomatoes in a salad bowl. Sprinkle with the garlic and rosemary oil, the dressing and the roasted pine nuts.
Serve lukewarm.
